为了解新乡市市售酸奶微生物含量,按国家规定的方法对24袋新乡市售保质期内的酸奶进行了大肠杆菌、沙门氏菌、乳酸菌、金黄色葡萄球菌和霉菌、酵母菌的测定.结果显示:24份检样中酵母菌、霉菌、伤寒沙门式菌、金黄色葡萄球菌未检测出,符合国家标准;大肠杆菌于一份光明酸奶样品中检测出,为1.0/ml,略超出国家标准,即合格率为87.5%;伊利的原味酸奶在生产初的乳酸菌活菌数量较高,但在后期下降较快,光明酸奶则相反,蒙牛酸奶介于两者之间.
